Banana Cupcakes with Salty Oats...
Okay cupcake probably doesn't accurately describe these... more of a muffin with strong cupcake tendencies. I cut out some of the sugar and added wholesome oats and tropical V8 Splash Juice.
Are they healthy??? Depends what your definition of healthy is... all natural? Yes! Lower sugar? Yes !Serving of fruit? If you eat a few Yes! Healthy or not, they are delicious!
1 cup Pastry Flour 2tbl melted Butter
1/2 cup Sugar 2/3 cup Tropical V8 Splash/ or other fruit juice
2 tsp Baking Powder 2 very ripe Bananas
1/2 cup Oatmeal 2 eggs
1/2 tsp Salt
3 tbl Oil


Mix in two eggs.
Fill up your muffin tins...should make about 2 dozen.

Cool and frost with 8oz softened cream cheese mixed with 4 tablespoons powdered sugar.
Now for the cool part, salty oats. In a dry pan toast your oats for about 5 minutes over medium heat... keep them moving.. burnt oats are good for nothing. The oats took longer than I expected to get toasty, once they're fragrant throw a good amount of salt about 1tsp for 1 1/2 cups of oats..ish... Toasted salty oats kinda taste like popcorn, can be enjoyed just the same. Sprinkle your cakes, toss a handful back and Enjoy!
