Perfect Rice Krispy Treats!


I admit I've only actually made Rice Krispy (or Crispy or Cereal, I'm not sure which way is correct) treats a few times in my life. After so-so results from the recipe on the marshmallow bag I searched for various recipes online that claimed to be the best, the gooiest, and the softest treats. 
Some recipes had treats with whole mini marshmallows mixed in, or marshmallow fluff spread over the top. Some added chocolate, or started with a different cereal all together. Surprisingly though, most were very similar when it came to the ratio of butter to marshmallow, to cereal. ( If everyone on the internet is doing it then there's gotta be something to it...right?!?) 

 I complied a few of the so called 'best' recipes and tweaked them to my liking to come up with what I think is the Perfect Rice Krispy Treats!  I did use Rice Krispy cereal in my recipe, so I think I'm allowed to spell it that way :)   Printer Friendly Recipe!


  Start wth one stick (1/2 cup) of butter melting over medium heat.
Add 2 tbl vegetable oil.
(The oil keeps the marshmallows from sticking too much together to keep the treats 'lighter and fluffier')


Once melted add a generous 10 cups of marshmallows ( buy the 15 oz bag) and 1 tsp vanilla. Stir until just almost melted but some hunks of marshmallow remain. (Marshmallows are mostly sugar, and cooking sugar past a certain point only makes it harder after it cools.... the difference between making fluffy marshmallows and hard candy kinda boils down to how long you cook the sugar for in the first place) 


 Stir in 6 cups of cereal and stir for 10 seconds, remove from the heat and keep stirring just until it all comes together.
 ( Here's where you can tweak to your own liking.  Adding less cereal will make the treats gooier and stickier, adding more will make more traditional crunchy treats)
I also added a tsp of cinnamon to mine, I loved it, but you can omit it too.


 As soon as everything is mixed together, pour out onto a greased sheet tray and gently but quickly smooth out a little.  After research and my own experience pressing the treats down into even squares only compacts everything and you'll end up with a dense rather than gooey treat. I think the bumpy texture give the treats a very homey wonderful feel anyways.
Because of the higher marshmallow content the treats stay softer longer.
Cool for 1 hour and you'll be enjoying gooey treats for days to come!

Perfect Rice Krispy Treats
Makes about 16 large treats
Cook time: 5 minutes Prep/Cool Time: 1 hour

Ingredients:
1/4 cup (1 stick)  Butter, unsalted
2 tbl Oil
10 generous cups  Mini Marshmallows (about 14oz)
1 tsp Vanilla Extract
6 cups Rice Krispy's
1 tsp Cinnamon ( optional )

Preparation:
1.  In a large non-stick pan melt butter and oil together over medium heat.
2.  Add mini marshmallows and vanilla, stirring constantly. Heat just until most of the marshmallows are melted but a few chunks remain.
3.  Quickly stir in 6 cups of cereal and cinnamon.
4.  Mix just until all the cereal is coated. Pour out onto a greased cookie sheet and gently spread out, taking care not to compact treats too much.
5.  Cool for 1 hour. Enjoy! Store in airtight container and treats will stay fresh for days to come!

*Tip* For gooier treats add less cereal (5 cups), for crunchier add more cereal (7 cups).
